Hello,
I have finally found the problem
As I suspected at the beginning, it's due to Cloudflare.
Not the server, PHP or a manual update.
This article put me on the right track:
https://www.itoctopus.com/ajax-loading- ... la-website

This file must also be excluded from protection in Cloudflare:
https://www.[joomlawebsite].com/administrator/components/com_joomlaupdate/restore.php

I had previously excluded this file from protection :
https://www.[joomlawebsite].com/administrator/components/com_joomlaupdate/extract.php

After that, the Joomla update went through completely without an error.
