You want to keep it simple, I understand that. I can think of a few solutions (consider them as you will).

1. The primary solution: use the article editor joomla already has. You could set up a "profile" (such as in JCE Editor) with minimal formatting for text (such as font, size, colour, bold italics, underline, plus if necessary ability to insert images and add hyperlinks. All done easily in JCE, and I would think in TinyMCE. I think JCE already has several profiles already created when you install that editor extension. Then from the front-end the user would need to see a "New Posting" and/or "Edit my posting" (or similar), through "Editor" permissions, and set it so they can only post to one particular category (I'm not familiar how to do that, but sure it is possible).

The logged in user would need to be set as "Editor" so they could submit and edit but not publish, as that should probably go to the super user of the site (yourself?).

Other ideas (perhaps over-blown):

2. Fabrik - create your form, your database tables, and report to output the results of the submission. Not familiar with Fabrik but you may even been able to do a search form and that sort of thing.

3. Forum software such as phpBB. A key example is the Professional Solutions subform on this Joomla forum where users 'advertise' a request seeking paid development services. You could do it the opposite way, advertising a product or service for sale or whatever. You could open the postings "for discussion" or keep the forum locked down like it is on the joomla forum.

Just my 3c for the above ideas.
